Well, it could be any quest that is very hard or slow to complete.
So far, it's the quests that deal with the main plot line.
(level 1.5) Village Greens: Balance of Power, quest from Commander Leon
Behind Enemy Lines, quest from Remo
(level 2.5) Bill's Ranch: The Stooce is Loose, quest from Rancher Bill
(level 3.1) Zen Gardens: Katsumi's Kokeshi Doll, quest from Katsumi
(level 4.3) Bass'ken Lake: Logan's Wailing Windmill, quest from Logan
(level 5.3) Old Aqueduct: Through the Star Portal!, quest from Concerned Citizen aka Agent Caruthers
(level 6) Gold Beach: unsure if there's even a quest for the rings...
(level 8 and up) Otami Ruins: Blaze will give you a ring once you're done with all of her and the twins' quests (Rin and Lin)
Note: you can usually get rings from monster drops. Honestly, you might as well join a crew (since being in a crew will give you better drops, including rings). If you solo, your chance of getting ring drops is low, but still there.
Most of the quests involving rings usually have a boss you have to defeat. Plus each task has a level difference.
