The serfs were bound to the land. They did not own it, but they were allowed to live on it and farm it. They were not allowed to leave it, and could not be put off of it by the owner. It was as though they were part of the property. But they were free to do as they chose, in terms of deciding what to plant and when, what else to do, and so on.
In the early part of the Middle Ages, the land belonged to the king, and the members of the nobility were allowed to use and control it, which they did for profit by taking a share of the crops the serfs produced. Later, members of the nobility, and even the middle class, were regarded as the owners. One way or the other, however, they had to respect the rights of the serfs, who they had to allow access to the land and protect in exchange for a portion of the crops.
