In the early years the oil was not replaced by anything.

This often caused land and seabottoms to sink, even several meters.

These days one pump in seawater in order to get more oil and gas out of a drillhole/oilwell.

What happens to crude oil once it has been brought to the earth's surface?

Crude oil must be processed and stored. The processing in needed to remove gas and water that may be present. In some fields, there may be sour gas, that must be processed (amine units are common) to remove the hydrogen sulfide. Sand may be present, particularly in heavy oil deposits, which requires special processing. The processing is called separation. A separator is a large cylinder where oil, water and gas can settle and be removed. Crude oil may go through several separators, in order to have an acceptable crude for the refinery. The crude oil typically will go to storage tanks, and from there be shipped by pipeline or tanker to the refinery, where it will undergo fractional distillation on a very large scale to separate it into usable materials. How do scientists know that some places that were once underwater are now deserts?

Archaeologists and scientists use various dating methods, such as carbon dating and relative dating to date specific sites. Layers build up in the ground and are stored throughout the years, and geologists can determine whether the ground was once covered in water by the layers of soil that once rested on the ground.

There is no definite answer to your question. Every reservoir has its "Crude type" that is unique in composition. And that is the answer for "crude oils". Crude types has different viscosity - some flow easy, other can be used as roof covering once cooled down after it surface. The next is the sulfur content, and alphaltines. Crude oil is recovered with water and sand that is removed.

Why does crude oil need to be refined?

Once crude oil is refined there are a variety of marketable products for profit. Crude oil can only be used directly as a fuel in certain steam engines, once refined there are many more options.
