It so happens I have a little shack in Phoenix and have done that route many times. it does make a difference what time of the year you're going. You can run into a lot of snow if you're driving through central Washington and then through NE Oregon and then Idaho. And of course if you go through Idaho, you'll have to take the 93 through Nevada. Much of the 93 is a one lane highway and is quite isolated; I am not fond of it for these reasons.
If you're going in a more hospitable time of the year, you may want to go through Utah. Southern Utah is pink. Zion and Bryce are definitely worth a visit and of course you can drop by the Grand Canyon on your way to Phoenix.
For easier terrain, I would recommend the I-5 down to LA. Southern Oregon and the most northern part of California are mountainous but even when I travel in late January there doesn't seem to be a lot of snow. The rest of California and Arizona is pretty easy driving. Hopefully you have GPS to get you through LA where you'll hook up with the I-10, which takes you straight into Phoenix. Happy travelling.
