For well done roast pork with good crackling rub scored skin with olive oil and then rub in plenty of salt. A good recipe for roasted pork tenderloin is to season it up with basil, salt, a bit of garlic, and roast in a pot with mushrooms, onions, peppers and potatoes. This will allow it to absorb all the juices, and you should continually basted the tenderloin with any water, dressing or sauce you wish.
