If you plan to go to sleep within a hour, you shouldn't eat anything. A very light snack would be the most (like a few crackers). If you will be awake for more than an hour, your snack should still be light like a piece of fruit or half a sandwich. The food you select has more to do with your activity than the hour. Some people that work at night eat breakfast at 11pm.
Well, as most people would be aiming to reat their bodies at about an hour or 2 away from this time, you would most likely eat something very light and easy to break down as you do not want to be heavily digesting anything during the night. Complex Carbohydrates are definately something to avoid at this time.
