It will probably run around 210 or a little higher. If it starts getting close to 240 or 250, your nearing the to hot for very long range. Answer
The coolant should be within a few degrees of the thermostat value. If you have a 190 degree thermostat, the temperature should be within 10 to 20 degrees.

Another way to cool down is to put the defroster on or the ac. This turns the fan on without waiting to get to the danger zone. If it doesn't go on you might be low on freon.
I use the defroster mode when I'm in line for inspection or stuck in traffic.

What is an ECT Sensor?

The ECT sensor is usually the Engine Coolant Temperature sensor. Most modern cars have such a sensor to advise the ECM/PCM about the operating temperature of the engine. Ford also uses a Cylinder Head Temperature sensor to detect overheating condition in the case of lost coolant..... The ETC, via the PCM, also controls the cold-start quantity of fuel required (given a specific temperature);.. in other words, it acts like a choke operation in cold weather!... I f malfubctioning, can cause prolonged cranking before engine start in cold weather.

First check to make sure you have coolant fluid in the radiator, if you have no coolant then you will not register any temp. If there is coolant then replace the temperature sensor. If it moves some as the car warms up, say to halfway to the first mark (1/8 scale), it might indicate that the thermostat is stuck open, not allowing the engine to warm-up to normal operating temperature. That can result in increased tail-pipe emission, reduced fuel economy, and poor heater perfromance in winter weather.
