It is because your thermostat is taking time to warm up. It should eventually rise up to the temp. that you set it as.
There is a slight possibility that light tapping on the housing may break it free, but too hard of a hit will break the housing. If the thermostat does free up it is most likely going to stick again. The best bet is to replace the thermostat.
