The converter manufacturer of your choice would be able to help you choose the right converter for your application. They have technicians that do this every day. It's probably somewhere in the 3000-4000 rpm range depending on many variables.
Yes the intake and exhaust valves have to be close.
Generally the exhaust lash is more than the intake. The engine data plate should have the valve lash info stamped on it.

Manual calls for .012 for intake and exhaust with engine warm. I would go .010 on the exhaust and as low as .008 on the intake, factory lash is a little loose in most mechanics opinion. Set factory and it will be a little noisy, but its your call!
