What size engine do you have?
Usually the size of socket comes in a socket set. Most common size is 5/8.
8mm is the socket size. Try and find a 6 point socket if you can, instead of a 12 point. Those little boogers round off very easily. I'm surprised GM didn't engineer a larger, stronger bolt for that application.
follow the top hose leading you from your radiator to your engine you should see a silver clamp holding the hose to what we call the housing , the housing has two screws with nuts on them use the right socket size to remove to change your thermostat which sits inside the housing
That depends on the engine. I believe that the 2.4L needs a 10mm socket, the 3.0L uses a 12mm, and the 3.3L/3.8L use a 13mm socket to remove the housing bolts.
