The practice of slavery gave rise to a type of music called spirituals. These spirituals were a combination of African folk songs and new styles of music the slaves learned in America. As the tradition of spirituals began to be engrained in generations of slaves, they began to be a sort of code, instructing slaves on how to escape, where to find safe houses, and which way to travel to get to the free states in the north.

This extremely difficult exercise ensured that we did not have to worry about the music but only focused on the notes. We did, in a sense, music improvise the piece. The benefit of the exercise was that when you had to sing with the music and then without it, you experienced a sort of muscle memory which made it easier for you to sing with a piece of music.
