This really depends on what you mean by "egg production". If you mean the actual development of the egg in the ovary, this begins during embryonic development (i.e. while the female baby is developing in utero). Human females are born with every egg (or ovum) that they will ever have. These eggs are held in a kind of "stasis" until puberty, when they fully mature during the menstrual cycle and are released from the follicle.
