I acually just made yogurt from unpasteurized milk last week for my food science class. We first pasteurized the milk at low heat long time, then we added our culture which was one tub of regular yogurt, and let sit for 3 days. When you stir it up you get the consistency you know from the store. this will last for 2 months if stored right.

It is also possible that unpasteurized milk was used and not properly brought up to temperature before inoculating the milk with the yogurt cultures. Of course, if you don't properly bring the milk up to temperature what you are going to have is spoiled milk...you wouldn't likely eat it because the smell would be awful.

Well ... sort of. It's not exactly the unpasteurized food itself, but the bacteria in it. The pasteurization process is designed to kill these bacteria, so if there were harmful disease bacteria in the food, then they'll still be there in the unpasteurized food, but if they weren't there in the first place, unpasteurized food is fine.
