It is usually considered to be neutrons and protons that hold most of an atom's mass, however there is one theoretical subatomic particle that is used to help explain mass, called the higgs boson particle.
They are called "subatomic particles." Another answerer suggested "nucleons," but this applies only to nuclear particles (protons and electrons). They are also Fermions, but there are fermions other than these three. I would stick with "subatomic particles."

The total number of subatomic particles in an atom of an isotope is the sum of the mass number and the atomic number of the isotope; the mass number counts the protons and neutrons together, and the atomic number recounts the number of protons, which in a neutral atom must be the same as the number of protons.
