Indian Teas of the Assamica classification have the highest level if tannins.

Almost all Indian teas of Assam have this characteristics and have a very strong brew which reflects the level of tannin present in the leaves.

Black then green then red and white. You can detect this by the bitterness of the tea. Also, tea's of the same type can have different levels like gunpowder green has more tannins than other greens. Tea will also have lower tannin content if you brew them at lower temps, like 150 for greens and you get most of the flavor, and around 170+ it starts to get pretty bitter, steep time matters too, obviously. Remember that loose leaf and hand picked are always best. Happy sipping!
