Ttelling a relative that you have romantic feelings of some sort for them is a line that once crossed, cannot be uncrossed.
Your cousin wisely does not wish to hold hands any more, because she knows that it might mean something to you that she does not wish it to mean. You have to respect that. You can't just tell her you no longer feel that way and then hold her hand again - she won't believe, nor should she.
No one's feelings turn off that fast, and now that you've even had them once, no form of physical contact would be appropriate.
Please understand that there is nothing wrong - in and of itself - in being attracted to your cousin, she may well be a fine and lovely young lady. However, there are severe societal and even legal restrictions on such interactions.
