BE HONEST. Unless, of course, you are sick because you stayed out a little too late celebrating, then it's OK to hold back a little.
Seriously, the main thing is to be upfront with the potential employer; we know that everyone gets sick from time to time. Just besure to apologize for having to reschedule, and please don't give too many details (like graphic explanations of your particular health issues--I say this because it has happened to me. Gross!).
