The Egyptians, when embalming and mummifying their dead, poked wire probes into the brain, and after mushing up brain, pulled the mushed up brain out through the nose with wire hooks. I assume you want the more modern method to remove the brain in its entirety? In which case a surgical circular saw is used to cut round the skull until it is free and the top can be taken off and the brain removed.
