because they start to well kind of like swell up or die because winter is coming so they change color kind of like meat sometimes its red when you buy it but brown when you cook it

They die, and they stop producing chlorophyl. It is what makes them green. The color they appear in fall is their actual color. The reason why they die is because they can't get enough water.

The Pigment changes from a green to a red-orange spectrum. eventually the dead leaves fall off of the tree to help the tree adapt to the snow. If the tree were to not lose it's leaves the snow would pile up onto the tree and tip it.
