5W-30/10W-30 is pretty much the standard for oil viscosity in most car engines. I personally wouldn't use 5W-30 because it is too light. 10W-30 is the all around general oil viscous enough for hot and cold temps. After an engine rebuild, you may want to run the engine and change the oil after a few hours of running. Then with new oil, run it for the normal intervals of 3 month/3000 miles. Some manufacturers put different oil in the new cars and require you to leave it in for their stated period of time in order to fulfill the break-in requirements. You don't want to use synthetic to break in because this can inhibit the engine's internal parts from breaking in(i.e. rings etc). Good luck!

Once a car is rebuilt, it is rebuilt forever
In case of a rebuilt engine in good condition and a temperate climate, use a 15-40 W oil. In case of a worn engine and a hot climate, use single grade 40 W.
depends who is rebuilding it. If you are and know what your doing then not that much. If you buy a rebuilt engine it will run you about 2000-3000. Then you need to have someone install it.
