The literal currencies in Europe were largely based on the French system, which in turn was an inheritance from and evolution of the old Roman currencies. Thus, the pence was equivalent to the denier, the shilling to the sou, the pound to the livre, etc.
For the most part, most of these grades of currency were not actually minted. They existed as units of account. Although this becomes less true the later you get in the Medieval era, generally the pennies (deniers, pence, pfennig, etc.) were the only physical currencies used, and certainly the only ones widely used.
Relative values of different national currencies was based on the relative confidence in them. They were valued by material (silver for the pennies) and mass, but different countries had reputations for debasing their currency. The German pfennig was highly devalued when the king could no longer enforce currency regulations, and you had "white pennies" (made mostly of silver) and "black pennies" (made mostly of copper), as they were called at the time.

Money never goes green on RuneScape. The gold coins are, in fact, the only currency and never change color. In our modern world we have coins that add up to green bills---in medieval times, there were no such paper bills. Money was always gold---literally. As RS was set in medieval times, the same is true for it.
