The oil absorbes the heat of the heating element more effectively than air would. The oil then transfers the heat to the outside of the heater, where it is exchanged into the surrounding air. It isn't like the heater is "burning" the oil. There are thermal cut-outs inside to denergize the unit if it gets too hot. Simple and easy.
