Do most mammals fly?
No. Bats are flying mammals. Flying squirrels glide rather than fly. I know of no others.

Yes. Bats are the only mammals capable of free flight, able to launch into flight from a still position. There are other types of gliding mammals, such as flying lemurs (colugos), sugar gliders and numerous other varieties of glider, marsupials commonly found in Australia, and flying squirrels. These animals can glide using membranes which extend from their wrists to their elbows. Unlike bats, these animals must launch from a high point in order to glide to a lower point, covering up to 50 metres of ground. This is useful for jumping large distances between trees.
Why is there a much greater diversity of flying birds than there is of flying mammals?
Think of it as the same thing as land mammals versus water mammals. Marine mammals first evolved to life on land and then adapted to return to the water, but not all mammals did that. Similar thing with birds. All birds evolved from common flying ancestors, whereas flying mammals evolved from land mammals at a much later point in evolutionary history. Hope that helps.
