It all depends on WHERE in Colorado. The Greeley area ( plains ) grows large crops of sugar beets and corn. ( Naming just a few ! ) Some of the mountain towns grow the most wonderful corn, potatoes and lettuce.
I have lived in the foothills, and also at 8,000 feet, and have gardened successfully in both places, almost every vegetable that has a growing season of 120 days or less. Tomatoes are a problem at higher elevations, since they require warm nights to ripen. Corn grows best at lower elevations.
