Zone 6 has winter temps down to -20F, so it becomes difficult to raise winter vegetables unless you have a hoop house or green house and some source of heat. With proper protection, many of the hardier greens, such as kale, collards, cabbage, and others, can survive. Without the protection, when you get the itch to grow something in Zone 6, it is best to use the winter months to germinate seeds indoors in preparation for the coming spring. In late February you can put out cabbage and onions. By mid-March the rest of the cool weather veggies can be planted (spinach, brocoli, peas, kale). Lettuces and sweet potatoes follow in early May.
Cold season vegetables include members of the Brassica family (cabbage, broccoli, brussels sprouts etc.), carrots, parsnips, leeks etc. During winter these can be grown in low/high tunnels, and cold frames. Leeks and brussels sprouts that were grown during the fall can be picked straight out of the snow. Squash, potatoes, onions, garlic and others are long storing and are harvested in the fall for use all winter.

Inland areas such as Al Ain are able to produce some crops as the air is drier, although the temperature is hotter. In most areas the soils are saline and are also not quiet suited to vegetable soil unless heavily composted. An assortment of vegetables can be planted in a domestic situation during the winter months when the temperature is cooler. Leafy normally winter season vegetables such as peas, beans and cabbage don't do very well as the winter temperatures are still fairly warm. There are an increasing number of Organic Farms springing up around the UAE, additionally they also now have a few hydropinic farms producing leafy vegetables.
