There are many vegetables that try their best to keep living even after they have been cut from the ground. You can grow celery from the cut base, romaine lettuce from the bottom of the head, carrot tops, potatoes from the "eyes", sweet potato ferns from an old, forgotten yam, garlic greens from the base and others. To get good variability in the crop you need reproduction by seeds. Given enough time, you will see flowers on almost every vegetable, and that's the way to get really good plants season after season.
You just put little parts of the vegetable you want to grow in the ground and just act like they're seeds.
