depends on your definition of "middle ages" but I guess your most likely referring to Yuan to Ming dynasty era.

In the Mongol Yuan dynasty, the streets would be filled with central Asian / mongol nobles / tibetian monks and maybe even people from further away, while that sight would disappear in the Ming dynasty.

On a general level, commerce thrived, as the majority of officials would be living in the city, and the service sector boomed and as a result also a civilian culture.

In the streets, aside from many peddlers / stands / shop selling various goods, you will also see performers , one of the most popular performance in this period were story tellers called shou shu ren, literally book tellers, they became the bases of most of China's most popular novels such as the Romance of the 3 Kingdoms and the Journey west etc.. (most of them were completely in the late Yuan early Ming era).

Operas also saw a major step forward in this period and became a dominant aspect of entertainment. Chinese Opera stories were usually more focused on tragedies and romance, though some were also about brave deeds in the past etc...
