Trenches are a kind of cheap fortification that vast numbers of soldiers can use during the kinds of battles that took place during WW I. So if you are in a trench, it is harder for the enemy to shoot you. Then you try to wait for the right moment to come out of your trench and advance upon the enemy and kill him. It was a very messy and difficult form of warfare, and nobody does it anymore because air power renders it obsolete.
