The Chestnut colored star 'Pilgrim' was played mainly by a very famous movie horse called Hightower (In the book Pilgrim is a bay Morgan). The Black horse (originally Chestnut in the book) is called Gulliver in the movie and he was played by Doc's Keepin' Time a very famous Quarter horse who also played Black beauty.

The horse's real name was Dollar, which was Wayne's horse, as opposed to using hired movie horses. On the screen I don't think the horse's name was every mentioned in the movie The Cowboys.
