Most men worked in the fields. In times of war they could be called to be soldiers. There were a number of jobs available to freemen. These included being soldiers, merchants, and tradespeople in towns and cities. They could be physicians, lawyers, or bookkeepers. They could be builders, or guards, or supervisors of various types of workers. Sailors and fishermen were needed. Large estates had professional hunters, grooms, carpenters, and cooks.
There were a lot of clergy. Just about anyone could join a monastery.
The nobility and kings had jobs of their own, tending to affairs, keeping their military in order, managing their estates, and so on.
Most women married, but not all. Some did washing, made or mended clothes, cooked, or cleaned. There were midwives all over, and a lot tended sick people also. A fair number went into convents.
Serfs did not have opportunities to move or choose jobs. Freemen had more opportunity, but usually took whatever sorts of jobs their fathers prepared them for.

It does not include general farming, which most people did, and it does not include some specialized jobs, such as knight or monastic (both of which were done by women as well).
