Before Christianity there was not an official religion in the Roman Empire. The Romans had their religion and the conquered peoples had their religions. The Romans tolerated the religions and customs of the conquered peoples for two reasons: 1) tolerance promoted stability and integration; a rigid policy regarding religion and customs would have led to many rebellions. 2) The Romans did not feel that their religion was threatened by other religions because pagan religions did not have a missionary spirit and did not try to convert people from different religions. The reason why the Romans at one point felt threatened by Christianity was its missionary zeal: they were converting many Romans and this was at times perceived as a threat to the Roman state, which was steeped in Roman religion.

Before the Roman Empire adopted Christianity, the predominant religion is what we now know as Greek mythology (which was a religion at one time; now that it is not taken seriously as a religion anymore, it has been demoted to a mythology). Greek mythology, Norse mythology, druidism, and various other European religions that predate Christianity were collectively known as paganism. So, you could say that Rome was pagan, before it became Christian.

It is not that the Roman Empire became Christian in 380. Christianity was already widespread before that. That was the year when Co-emperors Theodosius I and Gratian issued the Edict of Thessalonica . This made mainstream Christianity (Latin or Western Christianity and Greek or Eastern Christianity) the sole legitimate religion of the Roman Empire. The purpose of the edict was to ban dissident Christian doctrines, which were branded as heretic. Their persecution started soon afterwards. The main target was Arian Christianity, which was popular around the empire.

Before Christianity the Romans worshipped their own religion and the conquered peoples worshiped their own pagan religions. All these religions, except for Judaism, were polytheistic; that is, they had many gods. Roman religion had countless gods. The main deities were the twelve Di Consentes who came in six male-female pairings: Jupiter-Juno, Neptune-Minerva, Mars-Venus, Apollo-Diana, Vulcan-Vesta and Mercury-Ceres.

The Latin/Western Church and the Greek/Eastern Church were the main church of the western and eastern part of the empire respectively. They were two branches of one church which was called Catholic Church. They both subscribed to the Nicene Creed, a particular interpretation of the trinity, and opposed alternative interpretations of the trinity. Later these two churches spit and came to be called Catholic and Orthodox respectively.
