Well they were actually built especially for the movie. So I don't know the type of ship they were. But Jack's ship is called the Black Pearl. Commador Norrington's ship was called The Dauntless. Ummm.... That's all I know right know, Try wikipedia.

Norrington's ship was the Interceptor and is was played by the Lady Washington(http://en.wikipedia.org/wiki/Lady_Washington), in Pirates of the Caribbean: The Curse of the Black Pearl. The Black Pearl was built on a barge and is modeled after a galleon, but has traits of other vessels as well. The Endeavour is a ship of the line. I am not sure what exactly to rate her as, since I am not sure how many guns she carries. The closest I can come in my research to accuracy is comparing her to Lord Nelson's HMS Victory, a 102 gun vessel from 1765.

For the most part, real ships were used for the Pirates of the Caribbean trilogy. Some were not to scale size, and some were made in pieces, but there were actual ships that they used on a water set and at bays.
