Definitely the breed and health of the chicken. Breeds such as leghorns have been developed to become prolific egg layers, for commercial use (the eggs you see in the store were probably laid by a leghorn!), whereas decorative breeds such as the polish or sumatras do not produce as many (there are exceptions though!)
