The carbonate ions that receive a second Hydrogen ion become H2CO3, or carbonic acid, which is a very weak acid.
The Overall Chemical Reaction looks like the following:
NaHCO3(aq) + H3CCOOH(aq) --> H3CCOONa(aq) + H2O(l) + CO2(g)
The three products are: a soluble chemical named sodium acetate (H3CCOONa), More Water (H2O), and the Carbon dioxide (CO2) gas that produces the bulk of the effect described above!
