It depends on the vehicle and the size filter it uses. Most of the time you need an extra 1/4 or 1/2 quart. But the fact is you should never, ever, change your oil without changing the filter.

I would drain off a qt if it was me. You don't want the rotating assembly making contact with the level of oil because it will whip the oil into a froth reducing the oil's ability to lubricate properly.
One of two ways to do this. 1) Drain the oil out again and then pour through a funnel into the quart containers to remeasure the correct amount; or 2) with a tube put into the opening where you put the oil in, syphon out the extra quart. Extra work either way, but an easy thing to fix with just a little bit of time.
