The plant will not be able to make its own food and it will stop its natural processes of giving off oxgen, but the leaves may grow back because it could use its stored water and food for the short period of time it cant make its own food.

It depends on the reason that is doesn't have leaves. If they have fallen off due to disease or lack of water then the plant will usually die, however the leaves of some plants fall off during the winter with the plant becoming dormant only to regrow in the spring
