If the level is high enough it could begin to get churned up and when this happens you get lots of air bubbles in oil which can affect oil pressure. You could possibly lose some power if crank has to fight through a oil bath to turn, if you're a quart high I wouldn't worry, but if you check you oil and it's foamy I would either change it or let some out and let truck sit a day or two for things to settle down.
Too much oil can cause excessive crankcase pressure. That can cause oil seals especially turbo seals to blow. It can also damage catalytic converters.

We need to know the model and the engine size. Assuming you have the 5.3L it would be 6 quarts of any 5w30 motor oil.

it depends what kind of truck it is but most trucks take 5w 20 oil but check the oners manual for specific oil
