What will it do to your rifle if you reload 1000 grain bullets at 2500 fps and above out of your 700 NE rifle I'm a fan of recoil and have only done this once bu dont want to ruin my pricey rifle?

Then do not exceed reloading data. Standard load is 2000 fps with that bullet weight.

Standard loadings for the 700 NE are 2000 fps. Going above that loading is possible, but the likelihood of damage to the rifle is significant. The likelihood of damage to the shooter is also quite high. That would result in a muzle energy of over 13,000 ft lbs, and a recoil equal to more than a dozen .308 cartridges. Never exceed established load data when reloading cartridges.

The barrel is usually above the centerline of the gun. When fired, recoil pushes straight back from the line of the barrel, but that is offset above the centerline, and causes the gun to pivot.

Absolutely ! I have taken several with mine. It is a very flat shooting cartridge with very mild recoil. I prefer the 117 - 120 grain bullets, as opposed to the lighter 75 - 100 gr. The lighter bullets are great if you also wish to do some groundhog or coyote hunting. You can shoot a deer from 500 meters away with a 120 grain bullet! All you need to do is zero a scope in and take the crossair slightly above the deer and BAM! You've got a trophy waiting for you 500 meters away!

no they are not Well... In the sense that many bullets are solid lead, no, they can't be picked up by a magnet.
