Tex-Mex is the most common. It is a mix of the Texan and Mexican cooking cultures.
They eat most foods any other people eat. It is not like Texans are a whole other species...
Americans eat tacos, enchiladas, tamales, burritos, guacamole, salsa, tortilla chips, chimichangas, flan, fajitas and many other things.

Why would you eat that. It's disgusting!.....
Personally, I would prefer sushi, but eat whatever you like and feel would be best!
In short, Texans didn't want to be Mexicans. They broke all their laws and rejected their culture even though they were legally under control of Mexico. They refused to emancipate slaves and stop importing them, they refused to convert to Roman Catholicism, and did a lot of smuggling. Texans were also, for the most part, white Americans who immigrated there for money and opportunity. So there was tension between them and the native Mexicans. All of these factors created enough tension for Texans to finally openly defy Mexican rule rather than silently avoid laws or accept them begrudgingly.
because they wanted to
I enjoy it, but would not characterize my feelings as "love".
They would shoot you and eat your remains
