"Colonial" families generally didn't have many problems of running out of supplies; they weren't moving all that far. For colonial families, "west" was Kentucky or Tennessee through the Cumberland Gap, or perhaps to the distant wilds of Ohio. Game would have been plentiful, as would fruits, berries and wild roots and herbs.
60 years later, pioneers going to the Oregon Territory or California would have a more severe problem. West of Kansas, water would have been scarce, the mountains were incredibly tall, and hostile natives sometimes blocked the path. In those cases, they sometimes starved.

If colonial families ran out of supplies while traveling west, they would have to rely on hunting, fishing, and foraging for food. They might also try to trade with Native American tribes or other settlers for supplies. In extreme cases, they might have to turn back or find a temporary settlement until they could obtain more provisions.
