I doubt that you will be able to find a stainless steel knife block anywhere. Knife blocks are made of wood or plastic so that they cause minimal damage to a knife when inserting it in the block. A stainless steel knife block would not only be incredibly heavy, it would damage the knife blades whenever one was inserted or removed.
To clean a stainless steal knife black you must first clear off all the large debris off the knife block. then pour soapy water onto the knife block and scrub thoroughly with a sponge. After that rinse the knife block with warm or hot water, never cold. Lastly wipe the knife block down with sanitizer and dry with clean rag or paper towel.
