Switch on the side of the transmission was bad. Possible output speed sensor, it is on the left side of the transmission towards the rear. Two wires in the connecter.

The transmission computer defaults to second gear when it detects a malfunction and sets a code. You need to have the system checked with a scan tool to know possible causes.
If the speedometer is not working but the odometer is, I would suspect the dash cluster is at fault. If both speedometer and odometer are not working I would suspect the speed sensor on the transmission is at fault.

Having the speedometer jump and the engine stall in the 1994 Jeep Grand Cherokee Laredo could be a problem with the idle and the transmission. The transmission slipping can cause the speedometer to jump.
