First: Give the person a bowl or bucket in case of further vomiting, or take to a toilet.

Here is some cool water -- just sip little amounts. I'll leave some salt-tine crackers here beside you for you to nibble on. But just in case, I've put the wastebasket beside you... Would you like to go to the hospital / for me to call an ambulance so you can be seen by a doctor? Can I call anyone else for you? Don't worry about the floor/carpet-- we have plenty of people who will clean it up; we just want you to be safe and okay. I'll make sure someone brings all your belongings out of that room. No, no, I wouldn't hear of you trying to help clean up--I've had kids and pets so this is nothing new to me. You just stay here and relax, I'll be back with another cool cloth in a minute. -- I'd make sure to check on the person within a minute or two. I'd offer them a bed to lie on if they felt very poorly. But you can't force an adult to go to the hospital. If in my home, I'd offer to drive them home. If a "guest" in a hotel, I'd make sure they had a new room within 30 minutes. I would not reopen the other room until the mess and odor was cleaned up and the carpet shampooed with a disinfectant cleaner, and the whole room disinfected.
