Experts prefer to use either a regular wine glass or a tulip-shaped glass, one that curves slightly in below the lip before fanning out again. It is important that the glass be of fairly high quality as the thinner the glass, the more heat the cognac will draw from your hand. For a good cognac a cognac glass is essential. It is well-known that Cognac should be enjoyed in the right glass. That is of course, if we're talking of drinking it straight, not as a cocktail or a long-drink. In order to be considered worthy of the name, the brandy must be produced in the area surrounding the town of Cognac and it must be made at least 90% from three varieties of grapes that grow in the region, Ugni Blanc, Folle Blanche or Colombard grapes. In fact, those are only two of the criteria required by the Bureau National Interprofessionel du Cognac (BNIC), the body that has ultimate control over whether or not a brandy may be called Cognac.
