The word (Empire) did not apply in Islam. However, it was called (Khilafa, Caliphate). The greatest Muslim Caliphate (or Empire, if you like) was the Rashidun Caliphate, it began right after Mohammed's death 632 AD and ended (or renamed) in 661 AD. It extended from China in the east to Portugal in the west, and Armenia in the north to the horn of Africa in the south. it had the strongest and most organized both government ( led by Abu Bakr, then Omar, then Uthman then Ali) and army (commanded by the most famous Khalid Ibn al Walid on the Persian and Roman fronts. and Amr Ibn al Aas on the African front. then Tariq bin Zyad in Spain and Portugal. and many others)
