If I remember correctly, 'Jersey Side eggs' are fried sunny-side up, with a hot, soft yolk and the albumen (white part) is crunchy. The reason for the 'crunch' is due to frying 'pork roll' (Taylor Ham) in the pan FIRST -- this adds a distinct flavor to the eggs. Best served on a 'hard roll' with a slice of American cheese and a slice or two of fried pork roll - butter optional. Personally, I don't prefer my eggs crunchy.
