Walter Koenig was 30 when he first joined the Star Trek cast as Chekov in 1967. The first episode in which he appeared, Amok Time, the first episode of the second season, originally aired the day after Koenig turned 31.
The Shat... as in William Shatner is not playing in the new Star Trek Movie, the new James Kirk is played by Chris Pine.

It would depend upon which series you look at. Really, the only nicknames that the crewmembers ever get (in the three series I have seen: tos, tng, and enterprise...) are simply shortened version of the person's name. Such as Spock instead of Mr. Spock...or Chekov instead of Pavel Chekov. Or Trip instead of Charles Tucker the Third. (Trip being short for Triple).

Jeff Hunter's career decisions were made by his wife who turned down his chance at the second pilot, and he was replaced by the Canadian actor William Shatner.
