Psychrometrics have a great role to play in this question. If you take entering air at any given condition meaning a wet bulb and dry bulb temperature and you plot the entering air temperatures on the psych chart you will notice that the air is cooled sensibly as well as latently. Latent meaning a change of state will occur (condensation). As the air continues to pass over the cooling coil not all the air comes in contact with the coil. This is referred to as bypass factor. That means that not all air is cooled sensibly or latently some just goes right through the coil. This air is introduced to a raised humidity due to water on the coil and some is reintroduced into the air stream. This air is warmer and warmer air can hold more moisture, hence re introduction of water back into the air stream. Or, slight rise in humidity. This is really of no consequence if the system is sized correctly and or the run-time is lengthened along with proper tonnage required to handle the sensible load. At inlet of the evaporator, the refrigerant is predominantly in the liquid form with a small amount of vapor formed as a result of flashing at the expansion valve. the liquid refrigerant passes through the evaporator, more and more refrigerant is vaporized by the load. according to the load, the liquid will come into evaporator and vaporize and reaches to superheat at the end of the evaporator. The inside of the evaporator is far from dry but wetted with liquid so named as dry expansion evaporator.

the expansion valve is sandwiched between the a/c evaporator and the pipe assembly that the refrigerant passes through. the evaporator is inside the heater/cooler assembly under the dashboard. (not an easy fix for the uninitiated)
