The real Catholic St. George was a Roman Solider and not a disreputable bishop. It is likely that Saint George was born to a Christian noble family in Lod, Syria Palaestina during the late third century between about 275 AD and 285 AD, and he died in Nicomedia. In 302 Diocletian ordered the arrest of all Christian soldiers and if they refused to sacrifice to pagan gods, they were to be executed. George refused and was decapitated in the year 303 outside the walls of Nicomedia. While there are many legends that have grown up around the life of George that are probably untrue, the Church does not doubt that George existed and suffered martyrdom.
Edward Gibbon provides a good summary of the life of St George (George of Cappadocia) in The Decline and Fall of the Roman Empire.
