The turkey breast should be oven-roasted uncovered. The skin needs to be exposed to a 350° oven for about 1 ¾ to 2 hours to brown well. That is about the cooking time for a small 5 to 7 lbs breast. If your breast is bigger, the meat will not be done when the skin is nicely brown.
